What's fabulous about this urban mushroom farm isn't just that it produces 200 pounds of mushrooms in just a few weeks using recycled coffee grounds. It's also that it's small enough and attractive enough to sit in a lobby, a storefront, or any other public indoor space.
This is the latest installation featured at the studio of Seattle's Olson Kundig Architects. The tented mushroom farm contains 215 oyster mushroom growbags, happily feeding on donated used coffee grounds. Since it's glowing right in a Seattle storefront, it's a great way to advertise the benefits of urban agriculture. I wouldn't mind seeing such lovely little farms everywhere I went.
