If a fictional character is "white" just because he or she is "white" then there is no reason they can't be "not white." No more reason than the exact height, weight, eye color.
If the argument is that she must be white because her backstory is explicitly tied to her ethnicity. (i.e. Wonder Woman only makes sense if she is Greek. Shaft's story makes no sense if he is not black) then that makes more sense. Will Smith should not play The Godfather. Roger Craig should not play The Black Panther.
Of course given that the Amazons were likely actually Iranian or Central Asian, Wonder Woman should, in fact, not be Greek or white.
