personally I LOVED evolutions rainbow. I read it for a class actually hah. what about adding "the genetic code" by Asimov? For people that dont know how that basic stuff works, its an amazing eye opener, and he makes awesome sci fi predictions at the end! Or you could always add one of the classics in artificial intelligence/philosophy of mind. Like Boden, Searle, Turing. I dunno theres a lot, but they are all so great!
