@goldfarb: Maybe it blends in a different part of the light spectrum, or it's prey is colorblind? After all, hunters wear bright orange snow camo when hunting deer, because it makes them visible to other hunters, but no more visible to the deer.

When the critter above has its mouthparts fully extended the eyes at the side of the head are blocked. It's good to have a targeting system for the final strike. A bit like the Jacobsen's pits in the mouths of some snakes.

What would be awesome is a creature that doesn't look like every other movie alien, grabboid, and Blade vampire for the past decade.
I swear, they spent about a week on production design for this movie.
P.S. He's red for the same reason he has 200 independently moving eyeballs and bare skin in the ice- no reason.
