First, and probably too obviously for fans of the show, there's Billy. As someone who was the president's confidant and partook in some of the emotional experiences that Cylon's seemed to long for he seems like a very strong candidate.

I think less obvious would be Boxey. Written out of the show since season one he would be an interesting and nostalgic choice for last cylon. Also, he is probably still a child although many years seem to have passed since departing Caprica.
